Instructions

 

INGREDIENTS:  (Serves 1)
1 Chicken Breast
1tbsp Desiccated Coconut
¼ tsp Ground Cumin
¼ tsp Ground Coriander
½ Lime (zest and juice)
1tsp Rapeseed Oil
35g Couscous (dry weight)
½ Mango (Diced)
5 Leaves Fresh Mint (finely chopped)
Pinch Salt
Pinch Black Pepper

 

 

RECIPE:
Pre heat oven to 180˚c.
In a bowl combine the cumin, coriander, lime (zest and juice), rapeseed oil and half of the coconut. The roll the chicken breast in this mix until coated.
Foil line a baking try and place the chicken breast on it and roast for 15-20mins, or until cooked through.
Meanwhile, prepare the couscous. Once cooled add in chopped mango and mint
To serve place chicken breast on plate with couscous and a wedge of lime served on the side. Season with a little sea salt and black pepper, if you wish.
