-Grate the courgette onto some kitchen paper. Squeeze out excess water and leave to one side.

-In a large bowl measure out the cacao powder and slowly add a few teaspoons of boiling water until a smooth chocolatey paste forms.

-Add the peanut butter to the chocolate paste and stir well until evenly combined.

-Whisk together the eggs and add to the chocolate peanut butter mix along with the vanilla paste, baking powder and honey. Stir the batter until smooth.

-Roughly chop the dark chocolate.

-Fold grated courgette and chopped chocolate into the mix.

-Pour mixture into a lined and greased square tin

-Bake in the oven at 180 for 25-30mins. As soon as cracks appear it is ready to come out.

-Leave to cool in the tin, otherwise, it will be too runny to cut.

-Slice into 12 portions and enjoy!
