INGREDIENTS: (Serves 6)
1tbsp chia seeds (+ 3tbp water)
1 Ripe Banana
¼ tsp Vanilla Essence
½ tbsp Coconut Sugar
¼ tsp Baking Powder
½ tbsp Chia Seeds
Pre heat oven to 180˚c.
In a small bowl mix 1tbsp chia seeds with 3tbsp of water and leave for a few mins to thicken. This acts like an egg and helps to stick everything together.
In a big bowl mash up the banana, then add the oats, vanilla, cinnamon, coconut sugar, baking powder and soggy chia seeds.
Mix until well combined.
Foil line a baking tray, split the mix into 6 cookie shapes on the foil. Bake in the oven for 15-20mins, or until golden but sill gooey.
While the cookies are baking, blend up the fig with the chia seeds. Spoon the mix into a small bowl and place in the fridge to thicken.
Remove cookies from oven, and allow them to cool before topping each one with 6
of the figgy mix.
