INGREDIENTS:  (Makes approx 10)
125g Cashews (Plus more for decorating)
6 Dates
100g Whole Wheat Flour (Plus more for dusting)
1tsp Cinnamon
1/2tsp Ginger
½ tsp Nutmeg
1/2tsp Coconut oil
Cacao nibs (for decorating)

RECIPE:
Pour hot water over the cashew nuts and dates so they are just covered. Place a plate over the top to keep the steam in. leave to soak for at least 1 hour.
Pre heat the oven to 180˚C
Strain off the water of the cashews and dates (KEEP to one side). Blend the nuts and dates until a dough forms.
Transfer the dough to a large bowl and hand kneed in the flour, cinnamon, ginger and nutmeg. (If the mix is a little dry add a few splashes of the water from the dates and cashews. If the mix is too wet add a little more flour).
Once the dough forms a ball, dust the kitchen counter in flour and roll out until 1/2cm thick
Cut out your little ginger bread men (1 got 8 large and 2 little). Squash together the remaining cut-offs and roll out the dough again and cut out more gingerbread men! Repeat until all the dough has been used.
Use the coconut oil to grease the parchment paper on a baking tray. Place gingerbread men on the baking parchment. Decorate them as you wish. I used cacao nibs and cashew nuts.
Bake in the oven for 5-15mins depending on their size,.
Allow to cool on a wire rack and then munch away!

NOTES:
You could also decorate with dark chocolate drops, goji berries, raisins etc.
