INGREDIENTS:  (Serves 2)
300g Chicken Breasts
2tsp Smoked Paprika
1tsp Rapeseed Oil
200g Quinoa (cooked)
100g Mixed Leaves
40g Red Cabbage
1 Small Pear
70g Goats Cheese
6 Walnut Halves


Slice the chicken into strips and coat in smoked paprika. Pan fry in a splash of rapeseed oil.
Finely slice the red cabbage and pear. Mix together the leaves, cabbage, pear and cooked quinoa. Split into two serving dishes.
Top with the paprika chicken, dollops of goats cheese and a scatter of broken walnut pieces.
