INGREDIENTS:  (Serves 9)
150g Flour (Rude Health – Buckwheat)
1tsp Cinnamon
¼ tsp Ginger
¼ tsp Nutmeg
1 ½ tsp Baking Powder
75g Coconut Oil (melted)
3 Large Eggs
6tbsp Honey
200g Carrot (grated)
250g Quark
2 Small Oranges (zest only)
50g Sweetener Icing Sugar (Sukrin)


Pre heat oven to 160˚c and line a square baking tray with grease proof paper.
In a large bowl mix together the flour, spices and baking powder.
In a medium bowl whisk together the coconut oil, eggs and honey. Make sure the coconut oil is not hot otherwise you will scramble the eggs!
Slowly add the wet ingredients to the dry ingredients while whisking. Once the mix is combined, stir through the grated carrot.
Pour mix into the prepared tin and bake in the oven for 20-30mins.
Meanwhile mix together the quark, orange zest and icing sugar. Leave to thicken in the fridge.
Once the cake is cooked (check that knife comes out clean) leave on a wire rack to cool.
When the cake is completely cool spread over the quark icing and slice into 9…eat!
