INGREDIENTS:  (Serves 9)
Drizzle
1 Lemon (Zest + Juice)
1Tbsp Chia Seeds
1Tbsp Honey
Sponge
200g Flour (Rude Health – Spelt Flour)
½ Tsp Baking Powder
1 Lemon (Zest + Juice)
2Tbsp Chia Seeds
50g Coconut Oil (Melted)
2 Whole Eggs
4Tbsp Honey
100ml Almond Milk (Rude Health – Ultimate Almond)

 

RECIPE:
Pre heat the oven to 180˚C
In a small bowl mix together all the ingredients and set to one side to thicken (you could make this the day before and leave in the fridge over night).
To a large bowl add the flour, baking powder, lemon zest and juice, chia seeds, coconut oil, eggs, and honey (NOT the almond milk).
Combine all the ingredients using a spoon and then use an electric whisk to fully mix the ingredients together. As you whisk, slowly add the almond milk (you may need more or less so add it slowly!).
Once you have a smooth batter pour the mix into a baking parchment lined tin.
Bake in the oven for 10-15mins, or until a skewer comes out clean.
Once baked, remove from the tin and allow to cool on a wire rack.
Once the cake is cool, prick the top in even rows, using a fork. Pour over the drizzle and leave for a minute or to soak thorough.
Slice into 9 pieces and dive in!
