- 1 Turkey Breast
- ½ tsp Cajun Seasoning
- 1 Courgette
- 1 Carrot
- 1 Celery Stick
- 1 Spring Onion
- 1 Chilli
- 1 Beetroot
- 1 Lemon
- 1tsp Rapeseed oil
Instructions
- Pre heat oven to 180˚c
- Rub turkey breast with Cajun seasoning and roast in the oven for 20mins, or until cooked through.
- Grate courgette and carrot.
- Finely slice celery, spring onion, chilli and beetroot.
- Toss all the vegetables in lemon juice and rapeseed oil.
Once the turkey is cooked, slice it up and add to the top of the vegetables.
