- 1 Chicken Breast
- 1tbsp Desiccated Coconut
- ¼ tsp Ground Cumin
- ¼ tsp Ground Coriander
- ½ Lime (zest and juice)
- 1tsp Rapeseed Oil
- 35g Couscous (dry weight)
- ½ Mango (Diced)
- 5 Leaves Fresh Mint (finely chopped)
- Pinch Salt
- Pinch Black Pepper
Instructions
- Pre heat oven to 180˚c.
- In a bowl combine the cumin, coriander, lime (zest and juice), rapeseed oil and half of the coconut. The roll the chicken breast in this mix until coated.
- Foil line a baking try and place the chicken breast on it and roast for 15-20mins, or until cooked through.
- Meanwhile, prepare the couscous. Once cooled add in chopped mango and mint
- To serve place chicken breast on plate with couscous and a wedge of lime served on the side. Season with a little sea salt and black pepper, if you wish.
