- 80g Oat Flour
- 1/4tsp Baking Powder
- 1 Pinch Salt
- 30g Vanilla Reflex Pea Protein
- 1 Large Egg
- 30g Coconut Oil
- 80g Dates
- 2-3tbsp Boiling Water
- 1 Pinch Salt
- 10g Cacao Reflex Pea Protein
Instructions
- Preheat the oven to 160°c.
- Remove the stones from the dates. Place in a bowl, add the boiling water and cover for 10mins to soften.
- In another bowl mix together the oat flour, baking powder, salt, vanilla protein, egg, and coconut oil. Roll mix into 8 even balls.
- Grease a tray lined with baking parchment and flatten out each ball. Bake for 5-10mins or until golden. Allow to cool on a wire rack.
- Meanwhile blend up the dates, water, salt and cacao protein into a paste.
- Spread chocolate salted caramel mix onto 4 cookies, then top each one with remaining 4 cookies.
